Short answer is that some images are easier to paint with one medium over the other. E.g., human faces are typically easiest with oil paint because it dries slower, and the acrylic is great for large pieces because they dry quick.
The consumers are rarely affected by the medium choice except when it comes to the price. The oil paints are considerably more expensive than acrylic.

Master studies, where I copy the works of master artists from history, allow me to learn their simplified techniques to details I struggle to achieve.
It also makes it easy for me to know when I am done with it. My original paintings can go for weeks because I am changing or adding details while debating what would make it complete.
